Mixers are responsible for scaling and mixing ingredients to produce sweet dough and /or batters of specified flavours, textures and/or colour in accordance with specific recipe guidelines. Bakers ensure timely baking and cooling of Treasure Mills’ baked products while maintaining quality control and an organized production facility.
For Mixing:
- Pre-scale (weigh) ingredients with a high degree of precision
- Dump weighed ingredients into mixing machine by following the instructions on the recipe
- Must learn to understand how each ingredient affects the dough
- Ensure that all ingredients are properly stored and kept fresh
- Record production and test data for each food product batch, such as the ingredient used, temperature, pH, viscosity, lot number, and end time
For Baking:
- Carefully pre-heat the oven to the desired temperature for the products to be baked
- Ensure that batter does not sit for any extended period prior to baking
- Check the oven for proper working conditions
- Visually observe the baking process so that no products are over or under baked
- Complete QC check sheet throughout the shift
For Both:
- Maintain clean, organized and sanitary area
- Report any problems on a timely basis to the production supervisor
- Responsible for food safety and a clean working environment
- Adhere to plant policies and procedures, HACCP (Hazard Analysis Critical Control Points) and GMP (Good Manufacturing Practices)
Requirements
- Mixing and / or Baking experience preferred, but not necessary
- Knowledge and experience in food industry is considered an asset
- Organized
- Reliable, good work history and attendance record
- Good interpersonal and communication skills
- Be able to stand for lengthy periods
- Self-starter with a strong work ethic
- Ability to lift/push/pull 50 - 80 pounds
- Basic reading, writing and arithmetic
- Ability to multi-task in a fast-paced environment
- Shift work is involved. The bakery operates Monday through Friday 24 hours per day.
- Typical shifts are 8 to 12 hours in length with a work week of 36 to 48 hours.
